every time I work on some "simple" bug like "why doesn't this button click work on Big Sur" I end up spending the entire day debugging eventually discover it's a bug in framework or operating system or debugger or hardware

Maybe if I wrote worse codes, fixing bugs is easier

Expectation: locked in writing code all day
Reality: fixing CI/CD, downloading Xcode beta, updating iOS betas...

"apple never responds to bug reports" have you considered maybe you're just bad at filing bug reports?
